Among the stops on our tour, you will find establishments deeply rooted in Bilbao's history, extending over a century. These places have witnessed the city´s journey through different eras, from the days of republics and monarchies to the rise of nationalism, the times of the Civil War when one of the bars was seized, the Franco era, the transition period, the challenges posed by the Great Flooding, financial crises, the city´s restructuring, and the growth of tourism.
Throughout their long history, these taverns have consistently served as gathering places for social and intellectual matters. They have hosted Literature Circles, frequented by some of the most renowned Basque intellectuals. These establishments are revered as cultural hubs within Bilbao, actively participating in a wide array of cultural events, including lectures, poetry readings, dramatized performances, theatrical productions, and live musical performances.
Pintxos, a typical elaboration of northern Spain´s culinary heritage and particularly beloved in the Basque Country, are small tasty snacks enjoyed in the sociable atmosphere of bars and taverns. These flavorful bites have a strong social element, perfect for casual gatherings with friends and family. Unlike tapas, pintxos are different because are usually 'spiked' with a skewer or toothpick ( the toothpick is used to keep ingredients from falling off) often to a piece of bread. It is usually an appetizer that pairs wonderfully with a glass of txikito (a small wine) or beer, typically served in a quarter-pint glass.
While pintxo bars are common throughout the Basque Country, they diverge from conventional restaurants. Here, there is no need to book a table or wait to be served. The concept is just: “Help yourself and do not go without saying how many delicious pintxos you have eaten for us to charge you before you leave our pub". This trust-based concept is deeply ingrained in the culture, a testament to the close-knit community and the mutual respect the Basque people share.
Our tour will also lead you to newer establishments that offer avant-garde pintxos, showcasing a diverse daily selection of snacks. Expect to encounter innovative twists on traditional favourites, such as bread stuffed with succulent Iberian cured ham and Cantabrian Tuna paired with locally sourced ingredients, as well as Chef's creations that push the boundaries of flavour and presentation.
